panko crusted eggplant with egg and toasted bioche. wasabi MICROGRAMS

Dip eggplant in egg wash and coat with panko bread crumb. repeat 3-4 times.

Turn on burner to medium and add olive oil.

Once heated, put eggplant into pan and fry on both sides.

Once done, put to the side.

Crack an egg and cook to desire.

Toast Brioche.

Add Wasabi Microgreens and Sweet Chili Sauce.
